Sustainability is not a story we tell at the end of the value chain, it is the operating principle the farm is built on. Every step from cherry to green is designed to honor the land and the people who work it.
From the choice of climate-resilient varietals to the bags we ship in, our process is shaped by a simple test: does this respect the land that produced it?
Our production begins with conscious cafetal planting that respects the surrounding environment. Climate-resilient varietals are selected for the microclimate, shade canopy is preserved, and the soil profile is monitored continuously. This first phase decides what is possible later, so we treat it as the most important step.
We harvest annually, hand-picking cherries at their full maturity. Selective picking, rather than strip-harvesting, protects the plant, preserves immature cherries for later passes, and guarantees the cup quality that justifies the work.
After harvest, cherries are processed using methods that minimize water use and waste. Pulp and mucilage are returned to the farm as organic input. Wastewater is treated. The result is clean, green coffee, processed in a closed loop wherever possible.
Our drying, patio, raised bed, or cold chamber depending on the lot, preserves cup quality while minimizing energy. Sensor data informs when to turn, when to cover, and when a lot is finished, so we never over-dry or rush the curve.
Green coffee ships in recycled, recyclable jute or GrainPro liners. We work with logistics partners who share our standards. Every shipment carries the lot's provenance and the impact data behind it.
The People
Every member of our team comes from the surrounding communities of Coclé. We hire from the land that produces our coffee, train continuously, and pay rates that recognize the skill the work demands.
When the price of our coffee rises, the price the farm pays for labor rises with it. The exclusivity at the top of the value chain is built on equity at the bottom, that is the entire point.
Technology should serve the planet and the people who live on it. That is the only test that matters.
