The Process
Hand-picked cherries are floated to remove unripe and damaged fruit, then sun-dried in whole cherry on a combination of patios and raised beds. Drying takes 18–22 days, hand-turned multiple times daily to ensure even moisture loss.
The natural process honors Coclé's long-standing Robusta tradition while applying the sorting, drying discipline, and traceability of a specialty-grade operation.
